Application

B³ndner barley soup
for 5 persons

30 g butter
80 g chopped onions
50 g diced carrots
50 g slices of raw ham and diced beef
Salt and pepper
80 g rolled barley
15 g flour
80 g leek cut into cubes
30 g celery cut into cubes
1.5 litres stock
2 dl cream

Preparation:
Sauté the onions, leek, celery, carrots, raw ham and ground beef in butter. Add the barley and sauté. Dust with flour, add the stock, bring to the boil and simmer for about 1.5 hours. Finally, refine with cream and season with salt and pepper.

Smoked pork sausages, Wienerli or B³ndner leg sausage are suitable side dishes
