Properties

Coarse maize semolina, also known as bramata, is ideal for making polenta. Basic polenta recipe, side dish for 2-3 people: Boil 150 g of coarse maize semolina with 600 ml of liquid (salted water, stock or water-milk mixture) in a thick-bottomed pan and simmer for approx. 25 minutes. Stir regularly. Add nutmeg, paprika, thyme, other spices & herbs or cheese as desired during the simmering process. If necessary, leave to set for a few minutes before serving. Combines wonderfully with ratatouille, meat or mushroom dishes.
