Properties

There is nothing wrong with dill pickles or a summery cucumber yoghurt with dill, but to reduce the spice to just that would be a mistake. If you like Nordic cuisine, you can prepare gravad salmon, scallops or king prawns with dill sauce and enjoy the typical Scandinavian flavour. The clear, fragrant, lemony flavour of dill goes well with root vegetables, runner beans, potatoes and beetroot.
