Also known as the earth pear, earth apple, earth artichoke, Indian tuber or earth truffle, Jerusalem artichoke is the root tuber of a type of sunflower native to North and Central America. It is considered a very old cultivated plant of American Indian peoples. in 1610, French emigrants sent some specimens from the north of the American continent to Europe, where the tuber has been cultivated as an important food and fodder plant since the 17th century.
