Characteristics

NATURATA olive oil from Crete P.D.O. is labelled ½extra virgin+ and guarantees the highest quality based on various characteristics. Only mechanical processes are used for oil production. The acid value must not exceed 0.8 g per 100 g of oil and the peroxide value must not exceed 20. In addition, there must be no sensory defects. The acid number indicates the proportion of free fatty acids (calculated as oil acid). The longer an olive is stored in the oil mill between ideal ripeness and processing, the higher the proportion of free fatty acids. The lower the proportion of free fatty acids, the better the quality of the oil. A low peroxide value also indicates that the olives are processed quickly and the oil is fresh.
